Squash Casserole

Ingredients

  • 1 qt. summer squash, cooked until tender and drained well
  • 1 c. sour cream
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped (optional)
  • 1 can cream of mushroom soup
  • salt and pepper to taste
  • 4 c. buttered cornbread crumbs

Directions

    Mix together all ingredients, except cornbread crumbs.

    Line bottom of large greased casserole with 2 cups crumbs.

    Add squash mixture on top.

    Sprinkle with remaining 2 cups bread crumbs. Bake at 400° for 30 minutes.

    Toss bread crumbs with melted butter to coat well.
