Squash Casserole

  • 1 1/2 lb. yellow squash
  • 1 large grated carrot
  • 1 medium onion, grated
  • 1 tsp. salt
  • 1 c. sour cream
  • 1 can cream of chicken soup
  • 1 stick margarine
  • 1 pkg. Pepperidge Farm stuffing (small)

Directions

    Cut up squash and cook with carrot, onion and salt until tender.

    Drain well.

    Add sour cream and chicken soup.

    Mix well. Put in casserole dish.
  5. 5
    Melt margarine, add stuffing mix and put on top of squash mixture.

    Bake at 350° for 30 minutes.
