Squash Casserole

Ingredients

  • 3 lb. squash, cooked until tender
  • 1 pkg. Mexican cornbread mix
  • 1 can cream of chicken soup
  • 1/2 c. chopped onion
  • 1/2 c. chopped bell pepper
  • 1/2 c. chopped celery
  • 2 c. milk
  • 1 c. shredded cheese

Directions

    Make cornbread as instructions.

    Crumble and add 2 cups milk. Let soak. Saute onion, pepper and celery together.

    Add to bread mixture. Add 1/2 cup cheese. Bake 1 hour at 350°.

    Add 1/2 cup cheese. Return to oven for a few minutes until melted.

    Makes 1 large casserole.
