- 3 lb. squash, cooked until tender
- 1 pkg. Mexican cornbread mix
- 1 can cream of chicken soup
- 1/2 c. chopped onion
- 1/2 c. chopped bell pepper
- 1/2 c. chopped celery
- 2 c. milk
- 1 c. shredded cheese
Directions

1Make cornbread as instructions.

2Crumble and add 2 cups milk. Let soak. Saute onion, pepper and celery together.

3Add to bread mixture. Add 1/2 cup cheese. Bake 1 hour at 350°.

4Add 1/2 cup cheese. Return to oven for a few minutes until melted.

5Makes 1 large casserole.
