- 2 to 3 lb. yellow squash
- 1 medium onion, chopped
- 1 jar pimento
- small green pepper
- 6 slices bread, toasted and crumbled
- 1 stick margarine
- salt and pepper to taste
- 1 small box Velveeta cheese
Directions

1Cut up squash, steam and drain.

2In a bowl, mix medium onion, large jar pimento, small green pepper and box of grated Velveeta cheese.

3Mix in crumbs and butter.

4Beat 4 eggs with 1 cup milk; pour over mixture which has been put into casserole or baking dish.

5Bake 35 to 40 minutes at 375°.
