Squash Casserole

  • 2 to 3 lb. yellow squash
  • 1 medium onion, chopped
  • 1 jar pimento
  • small green pepper
  • 6 slices bread, toasted and crumbled
  • 1 stick margarine
  • salt and pepper to taste
  • 1 small box Velveeta cheese

Directions

    Cut up squash, steam and drain.

    In a bowl, mix medium onion, large jar pimento, small green pepper and box of grated Velveeta cheese.

    Mix in crumbs and butter.

    Beat 4 eggs with 1 cup milk; pour over mixture which has been put into casserole or baking dish.

    Bake 35 to 40 minutes at 375°.
