- 1 1/2 lb. squash
- 1 small jar pimentos
- 4 small carrots, grated
- 1 pkg. bread stuffing
- 1 can cream of chicken soup
- 2 small onions, chopped
- 1 c. sour cream
- 1 stick margarine
Directions

1Cook squash until tender in salted water.

2Drain and mash. Mix squash with pimentos, carrots, 1/2 package of stuffing, cream of chicken soup, onions and sour cream.

3Melt margarine and place in bottom of casserole dish.

4Put remainder of stuffing on top of margarine.

5Top with squash mixture.

6Bake 30 minutes at 375°.
