Squash Casserole

  • 2 lb. squash (6 c.)
  • 1 can creamed chicken soup
  • 1 pkg. seasoned stuffing mix
  • 1/2 c. butter
  • 1/4 c. chopped onion
  • 1 c. shredded carrot

Directions

    Cook squash and onion 5 minutes; drain.

    Combine with soup, sour cream and carrot.

    Mix stuffing mix and butter together. Layer half of stuffing mix on bottom of pan, then add squash mixture.

    Top with rest of stuffing mix.

    Bake at 350° for 30 minutes.
