Squash Casserole

  • 3 c. cooked squash
  • 1 can cream of chicken soup
  • 1 chopped onion
  • 1/2 c. margarine, divided
  • 1/2 pkg. Pepperidge Farm stuffing mix
  • 1 small jar chopped pimento
  • 1/2 c. sour cream or grated cheese

Directions

    Cook onions in 1/4 cup margarine.

    Melt other 1/4 cup margarine and mix with stuffing.

    Place half the stuffing in bottom of casserole.

    Mix squash, soup, onion, pimento and sour cream.

    Pour the mixture into the casserole and top with the remaining stuffing. Bake at 350° for 25 to 35 minutes.
