Squash Casserole

  • 6 or 8 squash, thinly sliced
  • 1/3 c. chopped onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. sugar
  • 2 eggs, beaten
  • 1 c. milk
  • 2 pkg. Ritz crackers, crushed
  • 1 c. shredded mild Cheddar cheese
  • 2 Tbsp. margarine, melted

Directions

    Boil squash and onion for 5 minutes; drain.

    Pour melted margarine into a casserole dish; add squash.

    Combine egg, milk, salt, pepper and sugar; mix well and pour over squash.

    Sprinkle evenly with cheese.

    Spread cracker crumbs over casserole.

    Bake at 350° for 30 minutes.
