Squash Casserole

Ingredients

  • 2 lb. squash
  • 1 medium onion, chopped
  • 1 c. milk
  • 4 eggs, separated
  • 1 c. sharp grated cheese
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper

    Boil squash and onion in a small amount of water until tender. Drain well.

    Puree in blender until smooth.

    Add additional ingredients except egg whites.

    Stir.

    Whip egg whites until stiff.

    Fold into squash mixture.

    Cover with bread crumbs and dot with butter.

    Place in a 2-quart casserole and bake 25 to 30 minutes at 350°.
