- 2 lb. squash
- 1 medium onion, chopped
- 1 c. milk
- 4 eggs, separated
- 1 c. sharp grated cheese
- 1 tsp. salt
- 1/2 tsp. cayenne pepper
Directions

1Boil squash and onion in a small amount of water until tender. Drain well.

2Puree in blender until smooth.

3Add additional ingredients except egg whites.

4Stir.

5Whip egg whites until stiff.

6Fold into squash mixture.

7Cover with bread crumbs and dot with butter.

8Place in a 2-quart casserole and bake 25 to 30 minutes at 350°.
