  • 1 lb. yellow squash
  • 1 tsp. sugar
  • 1/2 c. mayonnaise
  • 1/2 c. chopped onion
  • 1/4 c. chopped green bell pepper
  • 1 egg
  • 1/2 c. grated cheese for casserole
  • 1 tsp. salt
  • 1/2 stick butter
  • 1/2 c. bread crumbs
  • 1/2 c. grated cheese for top

Directions

    Boil squash until tender; drain, add butter and mash.

    Mix together sugar, egg, mayonnaise, pepper, onion, salt and cheese; add to squash.

    Pour into buttered casserole and top with bread crumbs and cheese.

    Dot with butter and bake 45 minutes at 350°.
