Squash Casserole

Ingredients

  • 5 zucchini or yellow squash, sliced not peeled
  • 1/2 c. chopped onion
  • 3/4 c. shredded carrot
  • 6 Tbsp. oleo
  • 2 1/2 c. Stove Top
  • 1 (10 3/4 oz.) can condensed cream of chicken soup
  • 1/2 c. sour cream

Directions

    Cook squash in 1 inch boiling salted water until tender.

    Drain well.

    Brown onion and carrot in half oleo in skillet.
  4. 4
    Stir in 1/2 Stove Top.

    Add soup, sour cream and squash.

    Pour in 2-quart casserole.

    Brown other half of Stove Top in remaining oleo and arrange on top.

    Bake at 350° for 30 to 40 minutes.

    Can use cheese on top also.
