  • 6 medium squash
  • 1 bell pepper
  • 1 small onion
  • 1/2 stick butter
  • 16 oz. sour cream
  • 1 can cream of mushroom soup
  • 1 small pkg. Cheddar cheese, grated
  • 1 small jar diced pimento, drained
  • 1/2 pkg. Pepperidge Farm cornbread stuffing

Directions

    Saute squash, bell pepper, onion and butter until tender.

    Mix together sour cream, cream of mushroom soup, Cheddar cheese, pimento and cornbread stuffing.

    Add to squash mixture.

    Top with remaining stuffing.

    Bake at 450° for 15 minutes.
