- 6 medium squash
- 1 bell pepper
- 1 small onion
- 1/2 stick butter
- 16 oz. sour cream
- 1 can cream of mushroom soup
- 1 small pkg. Cheddar cheese, grated
- 1 small jar diced pimento, drained
- 1/2 pkg. Pepperidge Farm cornbread stuffing
Directions

1Saute squash, bell pepper, onion and butter until tender.

2Mix together sour cream, cream of mushroom soup, Cheddar cheese, pimento and cornbread stuffing.

3Add to squash mixture.

4Top with remaining stuffing.

5Bake at 450° for 15 minutes.
