- 2 lb. yellow squash, sliced
- 1/2 c. margarine
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 2 eggs, well beaten
- 1/2 c. milk
- 1 c. shredded cheese (Cheddar)
- 1/2 tsp. salt
- 1 tsp. pepper
- 12 saltines, crushed
Directions

1Cook squash until tender; drain.

2Melt margarine in skillet. Add onion and green pepper; saute until tender.

3Blend eggs, milk, cheese, salt and pepper.

4Add onion and saltines to mixture.

5Mix and pour into buttered 2-quart baking dish.

6Add crumbled crackers to top.

7Bake at 350° for 30 to 45 minutes.
