Squash Casserole

  • 2 lb. yellow squash, sliced
  • 1/2 c. margarine
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 2 eggs, well beaten
  • 1/2 c. milk
  • 1 c. shredded cheese (Cheddar)
  • 1/2 tsp. salt
  • 1 tsp. pepper
  • 12 saltines, crushed

Directions

    Cook squash until tender; drain.

    Melt margarine in skillet. Add onion and green pepper; saute until tender.

    Blend eggs, milk, cheese, salt and pepper.

    Add onion and saltines to mixture.

    Mix and pour into buttered 2-quart baking dish.

    Add crumbled crackers to top.

    Bake at 350° for 30 to 45 minutes.
