Squash Casserole

Ingredients

  • 2 lb. sliced squash
  • salt and pepper to taste
  • 1 can cream of celery soup
  • 1 egg, beaten
  • 1/2 to 1 c. cracker crumbs
  • 1 medium onion, chopped
  • 1 lb. hamburger meat
  • 1/2 c. cheese (Cheddar or American)

Directions

    Slice squash and chop onion; put both in saucepan with enough water to cover vegetables.

    Boil until tender.

    Take 1 pound hamburger and brown in skillet with a little salt.
  4. 4
    Drain the grease from the meat and the water off the squash and onion.

    In separate bowl mash the squash and onion; add hamburger meat, soup and cheese.

    Add crackers and egg.

    Mix well; add salt and pepper to taste.

    Spoon into casserole dish and top with crushed crackers.

    Bake at 350° until cheese melts and casserole browns good.
