- 1 to 2 lb. yellow summer squash
- 1 to 2 zucchini squash
- 1 medium onion
- 1 can stewed tomatoes
- 1 lb. Cheddar cheese or Velveeta cheese
- salt and pepper to taste
- basil or parsley to taste
Directions

1Slice squash and onion.

2Simmer squash and onion until tender in small amount of water.

3Drain remaining liquid, once squash is tender.

4Add to this a can of stewed tomatoes (chopped).

5Simmer 10 to 15 minutes on low heat.

6Add sliced cheese to this.

7Let cheese melt.

8Sit for 10 minutes on very low heat until ready to serve.
