  • 2 pounds fresh squash (zucchini and yellow) grated
  • 1 medium onion, chopped
  • 1/2 stick of butter, melted
  • 1 cup Ritz crackers, crushed
  • 2 cups cheddar cheese, grate
  • 1 egg
  • 1/2 cup milk
  • salt and pepper to taste

Directions

    Beat eggs with milk. Combine all the ingredients. Pour into a 2 quart casserole and bake at 350 degrees for 45 minutes until set and edges are brown.
