  • 1/2 cups Butter (1 Stick)
  • 8 ounces, weight Package Herb Seasoned Stuffing Mix
  • 2 pounds Yellow Squash, Sliced
  • 1/4 cups Chopped Onion
  • 1 whole Shredded Carrot
  • 1 can Cream Of Mushroom Soup
  • 1 cup Sour Cream

Directions

    Preheat oven for 350.

    Melt butter and mix into bowl with dry herb stuffing mix (do not make the mix according to package).

    In a sauce pan cook the squash, onion, and carrot in boiling salted water for approximately 5 min; or until tender.

    Combine in a bowl the cream of mushroom soup and sour cream.

    Drain the squash mix and combine with the soup mix.

    Layer squash mixture and buttered dry stuffing mixture in a tall pan or oven safe bowl and bake for 25-30 minutes.
