- 2 lb yellow summer squash
- 1/4 cup chopped onion
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded carrots (optional)
- 8 oz pkg of seasoned stuffing mix
- 1 can chicken chunks (optional)
- 1/2 cup melted butter
Directions

1Cook squash and onion in boiling salted water for 5 minutes in a pan.

2Combine soup, carrots, chicken, sour cream, and cheese.

3Fold in drained squash and onion.

4In a separate bowl, combine stuffing mix and butter.

5Spread 1/2 stuffing mix in large casserole dish.

6Spread vegetable mix on top.

7Sprinkle remaining stuffing mixture over the top.

8Bake at 350F for 25-30 minutes.
