Squash Casserole

Ingredients

  • 2 lb. yellow squash
  • 1 large carrot, grated
  • 1 medium onion, chopped
  • 1 (2 oz.) jar pimento, chopped
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 (8 oz.) pkg. herb dressing mix
  • 1 stick butter

Directions

    Cook squash, drain and mash.

    Season with salt and pepper. Add other ingredients, except herb dressing and butter.

    Melt butter in oblong casserole dish.

    Stir in 3/4 of herb dressing mix.

    Mix until butter is absorbed.

    Combine with squash mixture. Pour into casserole dish and cover with herb dressing.

    Cover and bake at 350° for 25 to 30 minutes.
