  • 2 1/2 lb. squash
  • 1 medium onion, chopped
  • 1 large carrot, grated
  • 1 stick margarine
  • 1 (8 oz.) carton sour cream
  • 1 can cream of chicken soup
  • 1 c. Pepperidge Farm cornbread stuffing mix
  • 1 c. grated sharp cheese
  • pepper to taste

Directions

    Cook squash, onion and carrot until tender in 1/2 cup water. Drain.

    Mix with other ingredients.

    Top with 1/4 cup stuffing mix. Cook at 350° for 25 minutes.
