Squash Casserole

Ingredients

  • 6 small squash, sliced
  • 1/4 c. onion, chopped
  • 2 Tbsp. butter
  • 2 Tbsp. flour (plain)
  • 1/2 c. milk
  • 1/2 c. liquid from cooked squash
  • 1/2 tsp. salt
  • 3/4 c. grated cheese
  • 1/4 c. bell pepper, chopped
  • 3 Tbsp. bread crumbs
  • sprinkle paprika

Directions

    Cook squash and onion in small amount of water until tender. Drain, reserving 1/2 cup liquid.

    Make sauce in skillet by combining butter, flour, milk and reserved liquid.

    Cook until sauce is as thick as heavy cream.

    Add salt, 1/2 cup grated cheese, pepper and squash mixture.

    Pour into greased baking dish. Top with remaining cheese and bread crumbs.

    Sprinkle top with paprika.

    Bake at 350° for 30 to 40 minutes, until brown.
