Ingredients
- 6 small squash, sliced
- 1/4 c. onion, chopped
- 2 Tbsp. butter
- 2 Tbsp. flour (plain)
- 1/2 c. milk
- 1/2 c. liquid from cooked squash
- 1/2 tsp. salt
- 3/4 c. grated cheese
- 1/4 c. bell pepper, chopped
- 3 Tbsp. bread crumbs
- sprinkle paprika
Directions

1Cook squash and onion in small amount of water until tender. Drain, reserving 1/2 cup liquid.

2Make sauce in skillet by combining butter, flour, milk and reserved liquid.

3Cook until sauce is as thick as heavy cream.

4Add salt, 1/2 cup grated cheese, pepper and squash mixture.

5Pour into greased baking dish. Top with remaining cheese and bread crumbs.

6Sprinkle top with paprika.

7Bake at 350° for 30 to 40 minutes, until brown.

8Serves 4 to 6.
