  • 2 cups squash, cooked
  • 1 onion, chopped
  • 2 slices bread
  • 1/2 cup milk
  • 3 slices cheese, grated
  • 3 Tbsp. oil
  • 2 Tbsp. butter
  • 2 eggs
  • bread crumbs

Directions

    Boil squash in salted water until tender.

    Beat with mixer. Soak bread in milk and mix with squash. Saute onion and bell pepper in oil.

    Beat eggs, add to squash gradually.

    Add sauteed onion and butter and grated cheese.

    Put in casserole dish and sprinkle with bread crumbs.

    Bake at 350 degrees for 35 minutes. Makes 4-6 servings.
