Squash Casserole

  • 2 lb. chopped squash, precook in salt water
  • 1 stick butter
  • 1 c. chopped onion
  • 1/2 c. almonds
  • 1/2 c. mayonnaise
  • 1 c. chopped bell peppers, cook with onions
  • 1 Tbsp. sugar
  • 1 egg, well beaten
  • 1/2 c. pimento
  • 1 c. grated Cheddar cheese

Directions

    Cook onions and bell peppers in the butter until tender.

    Add all the other ingredients except cheese.

    Pour into casserole dish; put cheese on top.

    Bake at 350° until everything is cooked through good and cheese is done.
