Squash Casserole

- 2 lb. yellow squash
- 1 carrot, finely grated
- 1 onion, finely chopped
- 1 can creamy chicken-mushroom soup
- 1 small jar pimiento
- 1/2 pt. sour cream
- 1 small pkg. herb-seasoned stuffing mix
- 1 stick butter or margarine, melted
Directions

1Boil squash for 5 minutes; drain and chop.

2Add remaining ingredients, except stuffing mix and margarine.

3Mix stuffing and margarine together.

4Layer half the squash mixture in bottom of casserole dish.

5Top with half the stuffing and margarine mixture. Repeat layers again.

6Bake at 350° for 20 to 25 minutes.
