Squash Casserole

Ingredients

  • 2 lb. yellow squash
  • 1 carrot, finely grated
  • 1 onion, finely chopped
  • 1 can creamy chicken-mushroom soup
  • 1 small jar pimiento
  • 1/2 pt. sour cream
  • 1 small pkg. herb-seasoned stuffing mix
  • 1 stick butter or margarine, melted

Directions

    Boil squash for 5 minutes; drain and chop.

    Add remaining ingredients, except stuffing mix and margarine.

    Mix stuffing and margarine together.

    Layer half the squash mixture in bottom of casserole dish.

    Top with half the stuffing and margarine mixture. Repeat layers again.

    Bake at 350° for 20 to 25 minutes.
