  • 3 or 4 medium to large squash
  • 1 medium onion, diced
  • 1 stick margarine
  • 1 pkg. saltine crackers
  • 2 eggs
  • cheese (as desired)

Directions

    Place squash and onion in a boiler; pour enough water to cover squash.

    Boil until squash is tender.

    Add margarine; mix until margarine is melted.

    Add saltine crackers; mix well, then add eggs.

    Last, add cheese; mix well.

    Pour squash mixture into a baking dish; bake at 375° until golden on top.
