Squash Casserole

Ingredients

  • 2 lb. summer squash
  • 1 can cream of chicken or mushroom soup
  • 1 c. sour cream
  • 1/2 c. grated carrots
  • 2 large white onions
  • 8 oz. herb bread stuffing mix
  • 1/4 c. melted butter

Directions

    Cook squash and onions together until soft.

    Drain well and mash.

    Add carrots, soup and sour cream.

    Soften stuffing with butter and add to squash mixture.

    Spread in baking dish.

    Bake at 350° for 30 minutes.
