Squash Casserole

  • 1 lb. cut up squash
  • 1 chopped onion
  • 1 slice white bread, broken into pieces
  • 1/2 c. milk
  • 1 egg, beaten
  • 1/2 c. grated sharp cheese
  • salt and pepper
  • Ritz cracker crumbs

Directions

    Cook squash with onion in salted water until tender.

    Drain. Soak bread pieces in milk; add beaten egg, cheese, salt and pepper, then mix with squash.

    Pour all into a greased 1-quart casserole. Top with Ritz cracker crumbs and bake at 350° for 30 minutes or until set.
