Squash Casserole

  • 1 c cream of chicken
  • 3/4 c milk
  • 2 eggs well beaten
  • 2 c cooked summer squash
  • 1 1/4 c cracker crumbs
  • 1 1/2 c cups grated cheddar cheese

Directions

    Combine soup, milk, and beaten eggs.

    Stir until well blended, add squash, 1 c of the cracker crumbs, and 1 c of cheese, stir until blended.

    Pour into a buttered 1 1/2 quart baking dish.

    Mix together the remaining cheese and cracker crumbs.

    Sprinkle over top.

    Bake at 350° for 20 to 25 minutes.

    Serve 8.
