Squash Casserole

Ingredients

  • 2 lb. squash
  • 3 Tbsp. chopped onion
  • 1 c. sour cream
  • 1/2 c. Ritz crackers
  • 1/2 c. grated cheese
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 c. butter
  • 4-5 slices bacon

Directions

    Cook squash in salted water until firm.

    Drain well. Cook bacon, remove from pan and crumble on paper towel.

    Saute onion in bacon grease. Add onion, butter, cheese, sour cream, crackers, salt and pepper to squash. Bake in greased casserole dish at 350° for 40 minutes. Last five minutes sprinkle

    with cheese and crackers. Brown and serve.
