Squash Casserole

  • 6 medium squash (zucchini or yellow), grated
  • 1 large onion, chopped
  • 1 (8 oz.) carton sour cream
  • 1/2 stick margarine
  • 1 tsp. salt
  • 1 tsp. pepper
  • 4 c. cornbread crumbs or Pepperidge Farm stuffing
  • 1 c. cheese, grated (Longhorn is good)

Directions

    Cook squash and onion until tender; drain off water.

    Add margarine, salt, pepper, sour cream and 2 cups of cornbread crumbs or stuffing.

    Butter casserole dish and line bottom with remaining 2 cups of cornbread crumbs or stuffing.

    Pour squash mixture into dish.

    Bake at 350° until lightly browned.

    Add cheese; bake until cheese is melted.
