- 6 medium squash (zucchini or yellow), grated
- 1 large onion, chopped
- 1 (8 oz.) carton sour cream
- 1/2 stick margarine
- 1 tsp. salt
- 1 tsp. pepper
- 4 c. cornbread crumbs or Pepperidge Farm stuffing
- 1 c. cheese, grated (Longhorn is good)
Directions

1Cook squash and onion until tender; drain off water.

2Add margarine, salt, pepper, sour cream and 2 cups of cornbread crumbs or stuffing.

3Butter casserole dish and line bottom with remaining 2 cups of cornbread crumbs or stuffing.

4Pour squash mixture into dish.

5Bake at 350° until lightly browned.

6Add cheese; bake until cheese is melted.
