- 5 large squash
- 1 can cream of mushroom soup (may use cream of chicken)
- 1 c. grated American cheese
- 1 c. crushed Ritz crackers
- 1 large egg
- 1 large onion
Directions

1Dice squash and onion in a saucepan and boil until tender. Drain excess water and mash squash and onion mixture.

2In a large mixing bowl, mix mushroom soup, 1/2 cup grated cheese, 1/2 cup Ritz crackers, egg and squash and onion mixture.

3Pour mixture into a casserole dish.

4Top with remaining cheese.

5Top cheese with remaining Ritz crackers.

6Bake at 325° for 35 to 40 minutes.
