Squash Casserole

Ingredients

  • 1 lb. or 5 to 6 medium squash
  • 1 small onion
  • 3 tsp. margarine
  • 1 c. milk
  • 1 c. grated cheese
  • 1 c. cracker crumbs
  • 2 eggs, beaten
  • salt and pepper to taste

Directions

    Cook squash and onion until tender. Drain off water.

    Mash. Add margarine and 1/2 cup cheese. Stir until melted.

    Add milk, crackers and eggs.

    Season to taste.

    Bake in a 350° oven until slightly brown around edges of a buttered casserole dish.
