Squash Casserole

Ingredients

  • 2 lb. yellow squash
  • 3 tsp. butter
  • 1 c. cracker crumbs
  • 1 c. grated Cheddar or cubed Velveeta
  • 1 medium onion
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 c. milk
  • 1 egg

Directions

    Cook squash and onion until tender in small amount of water. Remove from heat; add salt, pepper and butter.

    Mix cracker crumbs, egg, milk and 1/2 of cheese.

    Then add to squash.

    Stir until well blended.

    Pour into casserole dish.

    Sprinkle remaining cheese over top.

    Bake at 350° for 20 to 30 minutes, depending on how hot your squash is.
