- 2 lb. yellow squash
- 3 tsp. butter
- 1 c. cracker crumbs
- 1 c. grated Cheddar or cubed Velveeta
- 1 medium onion
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 c. milk
- 1 egg
Directions

1Cook squash and onion until tender in small amount of water. Remove from heat; add salt, pepper and butter.

2Mix cracker crumbs, egg, milk and 1/2 of cheese.

3Then add to squash.

4Stir until well blended.

5Pour into casserole dish.

6Sprinkle remaining cheese over top.

7Bake at 350° for 20 to 30 minutes, depending on how hot your squash is.
