Squash Casserole

  • 1 lb. squash
  • 1/4 c. finely chopped onion
  • 1 c. grated cheese
  • 1 Tbsp. sugar
  • 2 eggs, well beaten
  • 3 Tbsp. butter
  • salt and pepper to taste
  • paprika
  • 1/2 tsp. sage

Directions

    Slice squash and cook in boiling, salted water. Drain.

    Mix all other ingredients except 1/2 cup cheese and paprika.

    Blend well with squash.

    Top with remaining cheese and sprinkle with paprika. Bake at 350° until cheese melts and casserole is piping hot.
