Squash Casserole

Ingredients

  • 5 or 6 medium squash
  • 1 medium onion
  • 2 beaten eggs
  • 1/4 stick melted margarine
  • 1 can cream of chicken soup
  • 1 box or pkg. corn meal mix, baked according to pkg.
  • salt and pepper to taste
  • 1/4 tsp. sage (optional)
  • 6 oz. Velveeta cheese (optional)

Directions

    Make cornbread and bake.

    Cut up squash and onion in pan and cook these two together until very tender.

    Drain the water off of squash, then mash very well.

    Can put into food processor.

    Mix this together with cornbread, beaten eggs, cream of chicken soup and other ingredients in buttered casserole dish.

    Mix well.

    Bake at 350° in oven for 30 to 50 minutes until top is brown.
