Ingredients
- 1 1/2 to 2 lb. cooked squash
- 1 lb. sausage, ground
- 1 pkg. herbs-n-butter flavored Rice-A-Roni
- 1 c. chopped bell pepper
- 1 small onion, chopped
- 1 c. chopped green onions with tops
- 1 can cream of mushroom soup
- 4 oz. sour cream
- 2 c. grated Cheddar cheese
Directions

1Cook Rice-A-Roni according to directions.

2Brown sausage and vegetables until vegetables are tender.

3Mash cooked and drained squash.

4Combine all ingredients except for 1 cup of the grated cheese.

5Pour into a large casserole dish and bake at 350° for about 20 minutes.

6Remove from oven and top with the remaining cheese.

7Return to oven for about 5 minutes more or until cheese is melted.
