Squash Casserole

Ingredients

  • 1 1/2 to 2 lb. cooked squash
  • 1 lb. sausage, ground
  • 1 pkg. herbs-n-butter flavored Rice-A-Roni
  • 1 c. chopped bell pepper
  • 1 small onion, chopped
  • 1 c. chopped green onions with tops
  • 1 can cream of mushroom soup
  • 4 oz. sour cream
  • 2 c. grated Cheddar cheese

Directions

    Cook Rice-A-Roni according to directions.

    Brown sausage and vegetables until vegetables are tender.

    Mash cooked and drained squash.

    Combine all ingredients except for 1 cup of the grated cheese.

    Pour into a large casserole dish and bake at 350° for about 20 minutes.

    Remove from oven and top with the remaining cheese.

    Return to oven for about 5 minutes more or until cheese is melted.
