Squash Casserole

  • 6 c. squash
  • 1 c. grated carrot
  • 1/4 c. chopped onion
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1/2 c. melted butter
  • 1 (8 oz.) pkg. Pepperidge Farm stuffing mix (don't use any other brand)

    Cook sliced squash and

    chopped onions in boiling water 5 minutes; drain.

    Combine

    cream in blender. Add carrots and soup mixture to squash.

    Combine stuffing with butter. Spread half of stuffing mix in greased casserole pan. Pour squash over stuffing; sprinkle remaining stuffing on top. Bake 30 minutes at 350°.
