Squash Casserole

Ingredients

  • 2 c of cooked yellow squash
  • 1 medium onion, chopped
  • 1 stick margarine
  • 2 eggs
  • 1 can cream of chicken soup
  • 2 c of crumbled cornbread (baked and cooled)
  • salt and pepper

Directions

    Saute onion in margarine over low heat until tender.

    in large bowl slightly beat eggs and stir in onions.

    Add squash and mash them.

    Stir in undiluted soup.

    Add corn bread and mix well. pour into greased casserole dish.

    Bake in preheated oven set at 350 degrees for 20-25 minutes.
