Ingredients

  • 1 c. green pepper strips
  • 1 c. sliced onions
  • 3 Tbsp. butter
  • 1 1/2 lb. yellow squash, sliced
  • 1 (1 lb.) can tomatoes
  • 3/4 tsp. basil
  • 1 tsp. salt
  • dash of pepper
  • 1 Tbsp. cornstarch
  • 1 Tbsp. water
  • 1/4 c. grated cheese

Directions

    Saute peppers and onions in butter.

    Add squash, tomatoes, basil, salt and pepper.

    Simmer for 15 minutes.

    Blend cornstarch and water and stir into squash mixture.

    Cook until thickened, turn into casserole and sprinkle with grated cheese.

    Broil until cheese melts.
