- 1 c. green pepper strips
- 1 c. sliced onions
- 3 Tbsp. butter
- 1 1/2 lb. yellow squash, sliced
- 1 (1 lb.) can tomatoes
- 3/4 tsp. basil
- 1 tsp. salt
- dash of pepper
- 1 Tbsp. cornstarch
- 1 Tbsp. water
- 1/4 c. grated cheese
Directions

1Saute peppers and onions in butter.

2Add squash, tomatoes, basil, salt and pepper.

3Simmer for 15 minutes.

4Blend cornstarch and water and stir into squash mixture.

5Cook until thickened, turn into casserole and sprinkle with grated cheese.

6Broil until cheese melts.
