Squash Casserole

  • 1 lb. fresh squash
  • 1 stick margarine
  • 1 egg
  • 1/2 c. mayonnaise
  • 1/2 c. onion, chopped
  • 1/4 c. bell pepper, chopped
  • 3 slices bread
  • salt and pepper to taste

Directions

    Cook squash until tender; drain.

    Mash with potato masher. Add margarine; beat egg, onion, bell pepper and mayonnaise.

    Stir well.

    Put in greased casserole dish.

    Brown bread real crisp. Crumble up bread and sprinkle on top of casserole.

    Bake at 350° until done (about 1 hour).
