Squash Casserole

Ingredients

  • 2 1/2 lb. yellow squash
  • 1/2 tsp. salt
  • 2 1/2 Tbsp. margarine
  • 2 c. grated sharp cheese
  • 1 medium onion, chopped
  • 3 eggs
  • green pepper strips to taste
  • paprika to taste

Directions

    Boil squash until tender; drain and mash.

    Add cheese, salt and onion and mix.

    Stir in eggs and mix.

    Pour in greased casserole dish.

    Dot with margarine, paprika and green pepper. Bake at 350° for 30 minutes.

    May top with 2 cups herb seasoned bread crumbs before adding margarine, paprika and green pepper.
