Squash Casserole

Ingredients

  • 2 to 3 lb. yellow squash, cubed
  • 2 medium onions, cubed
  • 8 to 12 oz. sharp Cheddar cheese, shredded
  • 3/4 c. margarine
  • 2 eggs, beaten
  • Italian bread crumbs
  • 1/4 c. milk
  • salt and pepper

Directions

    Boil squash and onion in salted water until tender.

    Drain. Put in a casserole with 3/4 of the cheese, the margarine and the salt and pepper.

    Let cheese and margarine melt.

    Mix well.

    Add eggs, milk and enough bread crumbs to desired consistency. Sprinkle top with remaining cheese and bread crumbs.

    Bake at 375° for 30 minutes or until brown on top.
