- 1 1/2 lb. yellow squash
- 4 carrots, grated
- 2 medium onions, chopped
- 1 small jar pimentos
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 pkg. Pepperidge Farm herb stuffing mix
- 1 stick oleo
Directions

1Cook squash until tender in salted water (drain).

2Mix carrots, onions and pimentos.

3Stir well.

4Add sour cream and cream of chicken soup.

5Mix well.

6Melt butter and mix with stuffing.

7Put a layer of stuffing mix in casserole, then squash mix, then another layer of stuffing mix on top.

8Bake at 350° for 30 minutes.
