Squash Casserole

  • 1 1/2 lb. yellow squash
  • 4 carrots, grated
  • 2 medium onions, chopped
  • 1 small jar pimentos
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 pkg. Pepperidge Farm herb stuffing mix
  • 1 stick oleo

    Cook squash until tender in salted water (drain).

    Mix carrots, onions and pimentos.

    Stir well.

    Add sour cream and cream of chicken soup.

    Mix well.

    Melt butter and mix with stuffing.

    Put a layer of stuffing mix in casserole, then squash mix, then another layer of stuffing mix on top.

    Bake at 350° for 30 minutes.
