- 2 lb. yellow squash
- 1 c. sour cream
- 4 grated carrots
- 1 (2 oz.) jar pimentos
- 1 medium onion
- 1 can cream of chicken soup
- 1 pkg. Pepperidge Farm cornbread stuffing mix
Directions

1Cook squash.

2Drain and season with salt and pepper.

3Mix with 1/2 stuffing.

4Add sour cream, pimentos, onion and soup.

5Mix other half stuffing with half cup melted butter.

6Line casserole with half stuffing; pour squash mixture into casserole.

7Top with rest of stuffing. Bake at 350° for 45 to 60 minutes.
