Squash Casserole

Ingredients

  • 2 lb. (6 medium) squash, boiled 4 to 5 minutes
  • 2 eggs, beaten
  • 1 c. mayonnaise
  • 1 c. finely chopped onion
  • 1/4 c. green pepper, chopped fine
  • 1/4 tsp. thyme
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 c. Parmesan cheese
  • 2 Tbsp. butter

    Beat eggs.

    Blend in mayonnaise, onion, green pepper and thyme.

    Mix well.

    Add to cooked squash.

    Butter a casserole. Sprinkle cheese over top and dot with butter.

    Put in fridge after it is covered with Saran Wrap.

    Bake, uncovered, at 375° for 25 minutes or until lightly brown.
