- 2 lb. (6 medium) squash, boiled 4 to 5 minutes
- 2 eggs, beaten
- 1 c. mayonnaise
- 1 c. finely chopped onion
- 1/4 c. green pepper, chopped fine
- 1/4 tsp. thyme
- 1 tsp. salt
- 1 tsp. pepper
- 1/2 c. Parmesan cheese
- 2 Tbsp. butter
Directions

1Beat eggs.

2Blend in mayonnaise, onion, green pepper and thyme.

3Mix well.

4Add to cooked squash.

5Butter a casserole. Sprinkle cheese over top and dot with butter.

6Put in fridge after it is covered with Saran Wrap.

7Bake, uncovered, at 375° for 25 minutes or until lightly brown.
