- 2 lb. squash, sliced
- 2 chopped onions
- 2 eggs
- 1 c. grated sharp cheese
- 10 crushed saltine crackers
- salt and pepper to taste
- 1/2 c. shortening
Directions

1In frying pan, combine shortening, squash, onions, salt and pepper.

2Cook until done.

3Drain well.

4Pour in casserole dish. Cool about 15 minutes.

5Beat eggs, then stir into squash and onions.

6Put cheese on top of squash.

7Sprinkle crushed crackers over cheese.

8Cook at 350° for 20 minutes.
