  • 1 lb. squash
  • 1/2 c. oleo
  • 1 tsp. sugar
  • 1 egg
  • 1/2 c. mayo
  • 1/2 c. water chestnuts
  • 1/2 c. onion, chopped
  • 1 tsp. salt
  • 1 c. Ritz cracker crumbs
  • 2 Tbsp. oleo

    Cook squash; drain.

    Add 1/2 cup oleo.

    Mash.

    Mix sugar, egg, mayo, onion and salt.

    Pour into greased casserole dish.

    Top with cracker crumbs.

    Dot with 2 tablespoons oleo.

    Bake at 325° for 1/2 hour.
