Squash Casserole

  • 1 lb. yellow squash, sliced and cooked
  • 1 c. American cheese
  • 1 c. bread crumbs, softened in 1 c. scalded milk
  • 1 c. green peppers and onions, sauteed in 3 Tbsp. melted butter
  • 2 well-beaten eggs
  • salt and pepper to taste (can add sugar)
  • crumbled crisp bacon for top

Directions

    Beat eggs.

    Add cheese; mix and add milk and bread crumbs. Cool slightly.

    Mix; add onions, green peppers and squash.

    Mix. Put in well-greased 2-quart casserole; sprinkle bacon on top. Cook 45 minutes in 350° oven or until knife inserted in middle comes out clean.
