- 1 lb. yellow squash, sliced and cooked
- 1 c. American cheese
- 1 c. bread crumbs, softened in 1 c. scalded milk
- 1 c. green peppers and onions, sauteed in 3 Tbsp. melted butter
- 2 well-beaten eggs
- salt and pepper to taste (can add sugar)
- crumbled crisp bacon for top
Directions

1Beat eggs.

2Add cheese; mix and add milk and bread crumbs. Cool slightly.

3Mix; add onions, green peppers and squash.

4Mix. Put in well-greased 2-quart casserole; sprinkle bacon on top. Cook 45 minutes in 350° oven or until knife inserted in middle comes out clean.
