Ingredients
- 2 lb. summer squash
- 1/2 pt. sour cream
- 1 can cream of chicken soup
- 1 medium onion
- 1 medium sweet pepper
- 1 large carrot
- 1 (8 oz.) pkg. Pepperidge Farm stuffing
Directions

1Slice squash in small pieces or blend in food processor.

2Cook squash and diced onion together in small amount of water until they are slightly tender.

3Drain off most of the water, leaving only a small amount.

4Grate the carrot, chop the pepper and add to squash and onion.

5Add chicken soup and sugar; mix well.

6Fold in sour cream and 3/4 stuffing.

7Add melted oleo and mix well.

8Pour into slightly greased medium size baking dish.

9Cook mixture with rest of stuffing.

10Bake at 350° for 45 minutes or until brown.
