Squash Casserole

Ingredients

  • 2 lb. yellow squash, sliced
  • 1/4 c. chopped onion
  • 1 can cream of mushroom or cream of chicken soup
  • 1 c. sour cream
  • 1 c. shredded carrot
  • 1 (8 oz.) pkg. cornbread or herb seasoned stuffing
  • 1/2 c. melted margarine

Directions

    Boil squash and onion for 5 minutes and drain.

    Combine soup and sour cream.

    Stir in carrots.

    Fold in squash and onion. Combine stuffing and margarine.

    Put 1/2 stuffing in bottom; spoon in squash mixture and top with rest of stuffing.

    Bake at 350° for 25 to 30 minutes.

    Serves 6 to 8.
