- 2 lb. yellow squash, sliced
- 1/4 c. chopped onion
- 1 can cream of mushroom or cream of chicken soup
- 1 c. sour cream
- 1 c. shredded carrot
- 1 (8 oz.) pkg. cornbread or herb seasoned stuffing
- 1/2 c. melted margarine
Directions

1Boil squash and onion for 5 minutes and drain.

2Combine soup and sour cream.

3Stir in carrots.

4Fold in squash and onion. Combine stuffing and margarine.

5Put 1/2 stuffing in bottom; spoon in squash mixture and top with rest of stuffing.

6Bake at 350° for 25 to 30 minutes.

7Serves 6 to 8.
